In my kitchen, from-scratch cooking means preparing meals with fresh ingredients instead of relying on pre-made items or packaged sauces. Because we build dishes ourselves, we ensure consistent quality and strong flavor. In addition, we protect the nutritional integrity of every plate we serve.

Fresh ingredients also support resident health. When we control what goes into each recipe, we eliminate unnecessary preservatives. Consequently, residents receive wholesome, high-quality food that promotes overall well-being.

Adapting to Individual Needs

Our team thoughtfully adapts each meal to meet individual dietary needs and preferences. Before service, we review dietary requirements and plan accordingly. Then, we set aside modified portions when necessary. This proactive approach ensures every resident receives a safe and satisfying meal without sacrificing quality.

At the same time, we balance comfort foods with fresh, health-conscious options. By preparing all dishes from scratch, we can refine traditional favorites. For example, we adjust seasoning, portion sizes, or cooking techniques to make meals more wholesome while preserving familiar flavors.

One resident favorite prepared entirely from scratch is our Pasta Primavera.

Resident-Favorite: Pasta Primavera

Yield: 1 serving
Prep Time: 10 minutes
Cook Time: 10–12 minutes

Ingredients

Pasta and Vegetables
3 oz pasta, penne or fettuccine
1 tbsp olive oil, divided
2 oz zucchini, sliced
2 oz mixed bell peppers, julienned
2 oz broccoli florets
1 oz onion, thinly sliced
½ tsp minced garlic
1 tsp fresh parsley, chopped
¼ tsp Italian seasoning or a pinch of dried basil
Salt and black pepper to taste
1 tbsp grated Parmesan cheese

Garlic Herb Sauce
2 tbsp chicken broth
1 tbsp olive oil
1 tsp fresh lemon juice
1 tbsp white wine

Garlic Toast
1 slice Texas toast
2 tsp softened butter
¼ tsp minced garlic
Pinch of parsley

Directions

Cook the pasta. First, bring salted water to a boil and cook until al dente, about 8 minutes. Drain and toss lightly with olive oil.

Sauté the vegetables. Next, heat the remaining olive oil in a sauté pan over medium-high heat. Add onion and garlic, cooking for 1–2 minutes until fragrant. Then add zucchini, bell peppers, and broccoli. Sauté for 4–5 minutes until tender-crisp. Season with salt, pepper, and Italian seasoning.

Prepare the sauce. Add chicken broth, lemon juice, and white wine to the pan. Bring to a gentle simmer and reduce slightly for 1–2 minutes.

Combine. Add the cooked pasta to the pan and toss until evenly coated. Stir in parsley and finish with grated Parmesan.

Prepare the garlic toast. Combine butter, garlic, and parsley. Spread evenly on the bread and toast in a 375°F oven or on a griddle until golden.

Serve. Finally, plate the pasta with vegetables evenly distributed and serve with garlic toast on the side.
